Chocolate Cake

Ingredients:

Method:

  1. Preheat oven to 160 degrees, grease and line base and sides of 23cm cake pan
  2. Place chocolate and 60g of butter in heatproof bowl over pan of gently simmering water
  3. Stir occasionally until melted, then set aside to cool
  4. Place sugar and remaining butter in electric mixer and beat until pale anf fluffy
  5. Beat in vanille extract, then add eggs one at a time, beating after each until combined
  6. Beat in the cooled chocolate mixture
  7. In separate bowl, sift together flour, baking powder and bicarbonate, then add almond meal
  8. In 3rd bowl, combine cocoa powder and 2/3 cup of boiling water
  9. Gradually fold the dry ingredients into chocolate mixture, alternating with cocoa mixture, until combined
  10. Pour mixture into prepared pan and bake in oven for 1 hour, check if skewer comes out clean
  11. Remove from oven, allow to cool slightly, remove pan collar, allow to cool completely

Red Velvet Cake

Method:

  1. Preheat oven to 180 degrees, grease and line cake pan with baking paper
  2. Use electric mixer to beat butter, sugar and vanilla in large bowl until pale and creamy
  3. Add eggs, flour, cocoa powder and buttermilk, until well combined
  4. Add vinegar, bicarbonate soda and food colouring, sitr to combine
  5. Spoon mixture evenly in pan, smooth surface, bake for25-30 minutes. then remove and cool
  6. Use fresh strawberries, raspberries and blueberries to decorate on top of icing

Layered Rainbow Cake

Method:

  1. Preheat oven to 180 degrees or 160 fan forced, grease cake pan, line base and sides with baking paper
  2. Prepare 3 packets of butter cake mix and split each into 3 so you have 9
  3. Add different food colouring to each section as wanted
  4. Bake each batter for 25 minutes, rotating halfway through cooking
  5. Remove cakes from pans after 5 minutes, then turn out on wire to cool
  6. Make frosting by placing egg whites, vanilla, sugar and 1/4 cup cold water in large heatproof bowl
  7. Whisk to combine, place bowl over saucepan of simmering water
  8. Use electric hand mixer, beat egg white mixture for 15 minutes or until stiff peaks form
  9. Remove bowl from heat, beat until cooled
  10. Place each cake on a board and spread icing between each layer
  11. Spread remaining icing on top and on sides of cake. then sprinkle with 100s and 1000s
